Favourite Drink Tuesday

Watermelon Margarita

7 1/2 lbs watermelon cut into 1 inch cubes
4 tsp fine sugar
6 oz tequila
24 basil leaves  + sprigs for garnish(only my most favourite herb)
3 oz triple sec
6 cups ice cubes

Step 1 Place 24 watermelon cubes on parchment lined baking sheet, cover and freeze 1 hr up to 2 days
Step 2 Puree remaining watermelon & sugar in a blender until smooth. You should have about 3 cups
Step 3 Place tequila and basil in a glass pitcher, crush or muddle the basil. Stir in watermelon juice and triple sec
Step 4 Place watermelon cubes in glasses. Using a cocktail shaker mix 3/4 of margarita with 1 cup ice and strain into a glass. Serve with garnished basil.
